상업적인 토마토 가공 과정에서는 exocarp와 seed를 제거하여 이용하는 것이 일반적이다. Miraculin의 이용에 있어서 exocarp를 이용하는 것이 보다 효율적이지만, 본 연구의 결과에서 exocarp가 차지하는 비율은 10%를 넘지 않기 때문에, medium size 이상의 품종에서는 가공에 적합하다. 가장 두드러진 특징을 가진 품종으로 M82는 jelly와 seed를 제외한 나머지 조직이 90%이상을 차지하고 있다. 이러한 특징은 miraculin 생산에 있어 exocarp에 miraculin이 많이 축적될 지라도 전체 비율에 대해 큰 영향을 미치지 못한다는 것을 나타낸다. 따라서 miraculin을 포함하는 토마토 페이스트 및 주스 등으로 가공할 경우, 다른 정제과정 없이도 대량생산을 기대할 수 있다. Large size의 품종은 비교적 jelly를 많이 포함하여 각 fruit tissue에 따른 비율로는 다른 품종과 큰 차이가 없으나, 실제 과실의 크기를 비교하면, jelly를 제외하고도 남은 부위가 M82와 같은 medium size 품종의 2배 이상의 중량을 갖는다. 이러한 결과는 가공을 목적으로 하는 경우 medium size 이상의 품종을 이용할 경우 보다 많은 miraculin 생산을 기대 할 수 있다. 토마토로부터 miraculin을 정제할 때에는 어느 조직에서도 추출이 가능하다. 토마토에서의 miraculin의 특성을 그대로 반영하여, exocarp가 차지하는 비율이 많은 품종을 이용함으로써 miraculin의 생산을 극대화 할 수 있다. Moneymaker 품종은 exocarp가 1.94%인 반면, Micro-Tom은 8.16% 를 차지한다. 이는 exocarp만 이용할 경우와 과일전체를 이용할 경우 모두, 같은 1kg에서 얻을 수 있는 miraculin의 양은 과일이 작고 exocarp가 많은 품종에서 단위면적당 차지하는 비율이 높으므로 보다 많은 양을 생산이 기대된다. |

In general, the exocarp and seed of tomatoes are removed for use during the commercial processing of tomato. The use of exocarp is much more efficient in the use of miraculin but since the ratio of exocarp, according to the result of this study, does not exceed 10%, it would be appropriate for the processing of medium or larger sized species. In M82, which is a species with the most prominent characteristic, the ratio of all tissues excluding jelly and seed is over 90%. Such a characteristic implies that the large amount of miraculin accumulation in exocarp in the miraculin production does not have great effect on the total ratio. Accordingly, when processing into tomato paste and juice that contain miraculin, mass production is possible without any other refining process. Large-sized species contains relatively large amount of jelly that it shows no significant difference with other species in terms of ratio of each fruit tissue but when comparing the actual size of the fruit itself, the remaining portion after removing jelly has the weight that is double the weight of medium-sized species such as M82. Such a result suggests that greater production of miraculin can be expected for the purpose of processing than using the medium to larger-sized species. When refining miraculin from tomato fruit, miraculin can be extracted from any tissue part. By reflecting on the characteristics of miraculin in tomatoes, the production of miraculin may be maximized by using the species that has the largest ratio of exocarp. Moneymaker’s ratio of exocarp is 1.94%, where as Micro-Tom’s ratio of exocarp is 8.16%. In both cases of using only exocarp and using the whole fruit, the amount of miraculin gained from 1kg of each type has greater ratio of each unit area in small-sized species with large exocarp, thus mass production can be anticipated. |
